Best Breakfast: Vegetarian Pita Sandwich

I meal plan for two weeks at a time, and with all of my projects, sometimes I’d rather just not cook. So here’s one of my more common, healthy breakfasts.
1 multi-grain or whole wheat pita, spread with homemade hummus, add a handful of (rinsed) alfalfa or broccoli sprouts, a slice of tomato, and a slice of avocado.
Fold in half and eat.
I know it doesn’t sound like much of a breakfast, but it’s packed with protein and nutrients. Really, it lasts me longer than most other meals. And if you’re still hungry? Eat another handful of sprouts, or raw pumpkin seeds, or drink a cup of miso soup with it and you’re good to go!
