So, I have a great fondness for mixing things that normally are not mixed. As I planned to make chili from scratch this week, I decided to use Adzuki beans (so good for you, and I like ‘em), black beans (so good for you, and I like ‘em), and pinto beans (just cuz).
What I found, is that if you soak them all together, the pinto beans that are touching the black beans will eventually look like this.
I’m not telling you this as a warning- it’s a suggestion! Think how much cooler your bean salads will be with purple pinto beans peeking through the mix! The plain pintos at the end are there for contrast.
Update: I just found out that pinto beans turn pink when cooked, so they may not stay purple. I cooked mine together with the black beans and adzuki beans, so I can’t tell you from experience. Yet.
